My Great friend Amy Filpot gave me a variation of this recipe and everytime I make them I get RAVE reviews on them whether it's steak or chicken. This marinade just gives it sooooo much flavor! The link I will list below is a slight variation from this one, but it also gives you a yummy option to make gyros in a pita with sauce that is sooo good too!
3/4 C. vegetable oil (i use olive oil)
1/2 C. lemon juice
1 TBLSP. oregano
1 TBLSP. Salt
2 tsp garlic powder
2 tsp pepper
Just mix everything together and cut meat into chunks before you put into the marinade so it soaks up as much flavor as possible. Then stick stick onto your skewers (soak wooden ones for at least 20 min) Add veggies if you like, and stick them on the grill until done! YUM

Peanut Butter Strawberry Bars
So this is actually a recipe I've been using for a couple years now. I found it in Better Homes & Gardens Magazine, and guess what it has in it, PEANUT BUTTER! Oh it just got better. And if you can't tell, I'm not a photographer, so not the prettiest picture in the bunch! But such a great recipe for July, just add blueberries and walah, Red, white & BLUE. The recipe is down below since it's not from another blog! 3/4 Cup butter softened
3/4 Cup Peanut Butter ( I use 1 cup & it's much more moist & peanut buttery!)
1 Cup Packed brown sugar
1/2 Cup sugar
2 tsp baking powder
1/4 tsp salt
2 eggs
1 tsp vanilla
2 1/4 cups flour
1/2 Cup strawberry jam (optional)
small tub cool whip (optional)
4 Cups Strawberrie, quartered
Heat oven to 350. Line a 9x13 pan with foil. Beat the butter & Peanut Butter for 30 sec. Beat in
both sugars, b. powder & salt until combined. Add in eggs & vanilla until creamy. Stir in the flour. Spread dough in pan and bake 25 min or until top is slightly browned. Cool Completely. Spread jam over the top then add coolwhip, then top with berries. Yummy!

Fajitas
Ok, so these fajitas made it on two blogs as their absolutely favorite fajitas ever. So of course I gave them a try and LOVED them. I actually tried it with steak first because that's what I had and they turned out great too. I actually used Mels Kitchen recipe because I liked how they added soy sauce and lime to the veggies. And once again, you got to buy the cook yourself tortillas to make them the best as possible! YUM!

Honey-Lime Enchiladas
If your looking for a light yummy way to mix up Enchiladas, I love this recipe. It's a bit different than your white cream sauce enchiladas that you are use to, but so worth the try! You marinate the chicken in honey, lime juice, chilli powder and garlic powder and drench with green Enchilada sauce. I love trying to find any way to use those yummy cook your self tortillas because they seal the deal with any tortilla recipe! I'm actually having these for dinner tonight with Corn on the cob and a green salad, YUM!

Chunky Monkey Pancakes with Peanut Butter Syrup
Ok, if you know me, you KNOW that I LOVE peanut butter, and I will seriously search the web for peanut butter recipes for breakfast, lunch, dinner and dessert! And so of course I came across these delicious pancakes. And as yummy as the pancakes were, I have to say the Peanut Butter Syrup was literally THE topper! BBQ Chicken Salad
Ok, during this fun, summer, BBQ'ing season you might be seeing a LOT of yummy salad posts! They are soooo easy to make as your main course and add some fruit as a side! This is another favorite of mine and Chris's and I follow it to a T except sometimes I add about a half squeezed lime when I toss the salad. And instead of making the tortilla chips in the broiler I tried another way of doing it over the stove top with oil until crisp. THen sprinkle them with salt once you place them on a paper towell to dry them out. YUM!

Franks Red Hot Chicken Salad
Ok, this is one of mine AND Chris's favorite Dinner Salads! Like Main Course, salad! And if a man loves, a salad that has to mean something right???? Chocolate-swirled-banana bread /classic banana bread.
I tried this bread for Bridger because he is always a big fan of any kind of bread, and oh boy did I fall in love with this! Especially the tip to warm up the chocolate swirled bread and add a bit of peanut butter to it. That did it for me, right there! I didn't have plain yogurt on hand so I used light sour cream instead and it turned out fabulous!!
Layered Overnight Salad
Well, if you like to plan ahead when cooking for a party, this is a good one for you! It was so nice to just pop it out and have a BBQ with no mess! My Dad REALLY enjoyed this salad!
