Crepes - Gluten Free

Ok, so I know I've already got 2 other Crepe recipes on here, BUT, my family loves crepes, and we eat them every Sunday!  So I experiment a lot with them.  Right now, I'm doing no sugar, no dairy and no wheat.  Yikes!  I Know!!  The things a girls got to do to try and keep a figure!  Anywho!  These Crepes!  My kids didn't flinch, didn't question, didn't nothing!  They loved them as usual AND I actually got to eat them during this strict meal plan I'm doing, and ENJOY them!  Ok, I didn't get to enjoy them with Peanut Butter and Pure maple syrup as I usually do, but I put drizzled Almond butter and crushed berries on them and didn't feel deprived at all!  YUMM!



This Recipe is very similar to my other recipes, but with a few tweaks to make it work!:

CREPES - GLUTEN FREE

8 eggs
2 Cups - Unsweetened Vanilla Almond Milk (or your choice of unsweetened non dairy milk)
2 TBLSP - Olive Oil (Or coconut oil)
2 tsp - Pure Vanilla extract
2 tsp - powdered stevia
1 tsp- salt
1 Cup - Organic Oat Flour
1 Cup - Tapioca Flour** (see note below)

Combine all ingredients except for the gluten free flours and mix until well blended.  Slowly add in the Oat flour and the Tapioca flour.  There will be slight lumps in the batter, just work them out as much as you can without over beating.  I kind of just squish them down with my measuring cup as I pour them into the pan.  I have two crepe pans going at one time to keep this moving along.  Make sure the pans are hot, and if you are using a non-stick pan, you only need to spray oil on it once in the beginning.  I pour between 1/4-1/3 cup of batter onto pan and swirl it around, then flip when bubbles are showing and its has slight browning spots on the bottom.
Serve hot & Enjoy!

**The Tapioca Flour gave these crepes a great texture.  Very springy and squishy.  They held up better than any other gluten free flours I've tried in the past (and I think I've tried them all!!)

Egg In a Hole - Another Breakfast option

Everyone has cut a hole out of their bread and cracked an egg into the hole before right?  We love doing that at our house.  Especially my seven year old.  But I know what it's like when you are looking for a low carb breakfast.  Pinterest is a dangerous thing when you love to cook because I seriously skim over everything until I see a picture of food, then I pin it to my most popular board "Recipes I want to try".  And most of them are probably peanut butter desserts.  Anyways, long story short, I found these yummy eggs in a Pepper ring and thought what a wonderful idea and gave it a try.  They were soooo yummy!  And for those little people out their that really need some substance to get them through school, just put a piece of toast under it for them!


All you do is cut a Green Bell pepper so it keeps it shape.  Heat a saute pan on med and spray with non stick pam spray.  You want to make sure your pan is heated before you crack your egg otherwise it will run all over the place.  Put your pepper on the pan and crack your egg into the pepper.  Sometimes you will need to apply a little pressure on the pepper so it doesn't leak out.  Sprinkle with Salt and Pepper and Parmesian Cheese.  Once it's cooked Really good on the once side, go ahead and flip it and cook to your desired consistency.  Yum!

Crepes - Paleo!

Is anyone else looking for something else to eat for breakfast besides eggs and bacon on this Paleo chanllenge???  Well  I was!!  These crepes are darn good, and darn easy!!!  If you think about it, the main ingredients is eggs, and you only have to do a little ingredient swapping and wala!!!  These tasted just like the real deal to me, maybe a little more eggy than flour(y), but that's what we are going for, right???  I just topped mine with Justin's brand Maple Almond Butter (my favorite) and Pure maple syrup!  They were awesome!  And I didn't feel left out while my kids and husband were eating their crepes!



3 eggs
1/4 Cup Almond Milk (I like Vanilla)
1/4 Cup Almond Meal
1 tsp vanilla
1/2 tblsp olive oil (or coconut oil)

Just whip all ingredients up in a blender.  Heat your skillet on medium heat.  Spray with coconut cooking spray and scoop about 1/3 cup of batter onto skillet.  Pick up skillet and swirl it to make a big circle.  Wait until edges start to curl a little and the underside is slightly browned and flip.  Beware, this does take skill, and you will get better with practice!!!

Sweet Potato, Sausage, Spinach Hash

Aloha Everyone!!  I just got back from a 9 day vacation to Maui and the only thing that brought me back were my 3 stink'n cute boys!  I sure missed them!  But I didn't miss this weather that's for sure!  The day before I left I made this yummy skillet breakfast that was awesome!!!  I didn't have chicken sausage so I used ground turkey sausage and it was awesome!  Definitley use the cinnamon called for!  And enjoy!!!  If I can't get a good picture I always still a copy of theirs so at least it looks appetizing, then my pics are down below!!

What's for Breakfast???? - LEFTOVERS!

A lot of people have been asking me what in the world are they going to eat for breakfast now that they aren't supposed to have Whey Protein Shakes, or Whey Protein Bars, or any kind of bread.  Well the answer my friend is going to be a lot of eggs, leftover dinners, and fruit.  I absolutely LOVED this mornings breakfast.  I just got out my Spicy Stuffed Peppers I made last night, cut one in half and chopped up the peppers, & then I threw it in the microwave.  Them I scrambled an egg, combined them together, topped it with Salsa, Avocado & Cilantro!  A Masterpeice!  I  actually had it for lunch too it was soo good (plus I needed to make it again so I could take a picture of it to put on my blog)!!

Pumpkin Pancakes - Paleo

And now for the paleo pumpkin pancakes I promised awhile back. You know I had to wait to post these in October, right? Anyways, these are good. And loaded with protein. Very low on carbs, and quite..... pumpkinee. You know when you get stuck in a rut and you just need to change things up? Here you go! The only extra ingredients you need that you might not have in your pantry is almond butter and pumpkin, but of course you would have pumpkin in your pantry in October! The crushed pecans on top are optional, but I thought they added a lot to it. And if you can't tell, hidden on the bottome pancake I snuck some peanut butter on it because I couldn't stand it! I had to have it. Please tell me to go to therapy for this because my gosh, the pancakes is Loaded with Almond butter!




2eggs - beaten with a fork

1/2 Cup pumpkin

1/2 Cup Almond butter (I use a tad less)

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp vanilla

1 tblsp Agave (or honey)

Just combine everything in a bowl and stir it up until smooth, cook on a grill a tad slower than you would with regular pancakes because there is no flour, and serve with real maple syrup, peanut butter, & pecans.

Healthy Breakfast Burrito - ZONE

During my Diet challenges I do often with Crossfit, I have a lot of people ask me what I eat for Breakfast. For the most part I try to follow the zone diet which I think is fabulous, and this is one of their breakfast that they suggest for you to eat. I of course added avocado to it because I think avocado and peanut butter belong in everything. When it comes to the tortilla, they highly recommend the corn tortilla because it has less calories, and less carbs. But I seriously ate this breakfast like 4 times a week because I loved it. I still eat it probably twice a week. 1 corn tortilla - heated for 30-60 seconds on each side
1 egg - scrambled
1 oz shredded cheese
1/4 Cup black beans
Avocado
salsa
cilantro -optional

While your egg is cooking, heat your tortilla on a skillet. Once you turn it, put your cheese on it so it can melt. Add your black beans, egg, salsa, and avocado and enjoy!

Crepes

Once again, more breakfast! I tell you I can't get anyone in the house to eat cold cereal except for Cord, and he just wants sugar cereal so he is allowed cereal like once a week! But my whole family loves these crepes and these come from a sweet girl Rachelle that is once again in my ward cookbook! There was actually a recipe I tried from one of my favorite blogs, but they were just too darn thick for our taste, and we just loved this recipe, so we are going to stick with it! I usually half this recipe for my family of five. 8 eggs
2 Cups milk
1 tsp salt
2 TBLSP oil
1 tsp vanilla
2 tsp sugar
2 Cups flour
Beat all the ingredients except flour well. Slowly beat in flour. Pour about 1/3 cup of batter into a sprayed, pre-heated pan, grab the handle and swirl the batter around to form crepe. Once you see the edges start to pull away, flip over and cook until they barely start to get some golden brown on them. My favorite way to eat these are obviously with peanut butter and light maple syrup with a sprinkle of powdered sugar on top. But a second favorite is with yogurt and strawberries with strawberry syrup and powdered sugar on top. YUM!

Whole Wheat Buttermilk Pancakes

So I know I've posted quite a few junkfood desserts, but for the most part I try really hard to find recipes for our every day living that I can actually call healthy for us. And my kids LOVE breakfast! I grew up as a cereal kind of a gal every day except once on the weekends when my mom wasn't at work and she could cook us a pancake breakfast. My kids don't love cereal. Cord is actually the only one that will eat cereal so I'm sure I will post a lot of different ways we enjoy breakfast. And this one is nice because I always have leftover buttermilk from some random recipe that I don't know what to do with the rest of. Buttermilk pancakes of course!!! I've actually had this recipe twice in the past week and tried different ways to substitute the white flour out and they have turned out fabulous! Instead of half wheat flour, half white flour. I used one cup whole wheat flour and a half cup of Oat flour one day, and they next day I used a half cup of buckwheat flour. Both Awesome!!! Banana, Almond Butter- Pancakes (Paleo)

So there is only going to be a select few out there that will appreciate this recipe, but ALL of you should try it if your looking to eat pancakes with your family guilt free, low carb, full taste! Yes, they taste like bananas, but banana pancakes:) And they are soooo good, especially if you throw some peanut butter and syrup on top! I have another paleo pancake recipe I will eventually post to that consist of pumpkin, cinnamon & nutmeg. Also very yummy! Enjoy!

1 Banana, mashed

1 egg- beaten

1 heaping tblsp Almond Butter

Yep that's it, 3 ingredients. Just put them in a bowl and mash together with a fork until you get a batter like consistency. Spray your grill/skillet and cook them at a lower heat like 325 or Med. You need to cook them a little slower because they are a bit gooshier. If you want to add a little flour to it, I added 1 tbslp of oat flour and they held together really nicely and added a little more substance, but totally not necessary!

Wonderful Waffles - gluten free & casein free

So what an enticing pic, right? I know, I should have taken a picture with peanut butter slathered all over it & dripping of syrup, but I didn't! But this just shows you, you can get a good texture with using gluten free flours! Once again, this is for my Bridger and his fun diet I get to deal with :) Bless his soul! 1 Cup GF (gluten free) flour blend. (I use 1/2 Cup brown rice flour, 1/2 cup oat flour)
3 tsp baking powder (I use aluminum free)
1/4 tsp salt
1 tblsp sugar (I use xylitol to make this recipe sugar free)
1/2 tsp xanthum gum or guar gum
3 eggs, seperated
1 Cup Milk or milk substitute to make it casein free ( I use almond milk or rice milk)
1/4 cup olive oil
1 tsp vanilla
Whisk together all dry ingredients in a large bowl. Separate the eggs- the whites in a small bowl and the yolks go into the flour mixture. Add the milk to the flour mix and whisk well. Beat the egg whites until stiff. Meanwhile, add the oil and vanilla to the batter & mix well. Pour the stiff egg whites into the batter and whisk well. Pour into your waffle iron and cook until desired texture! Bridger eats these at least twice a day with almond butter and sugar free maple flavored syrup.

Chunky Monkey Pancakes with Peanut Butter Syrup

Ok, if you know me, you KNOW that I LOVE peanut butter, and I will seriously search the web for peanut butter recipes for breakfast, lunch, dinner and dessert! And so of course I came across these delicious pancakes. And as yummy as the pancakes were, I have to say the Peanut Butter Syrup was literally THE topper! So go ahead and give it a try, you wont regret it!
