Spicy Stuffed Peppers

These Paleo friendly Stuffed Peppers are packed with tons of flavor!!!  I made these before last year and liked them, but I wanted to spice them up and LOVE them.  So I looked at like 4 different recipes and combined them into just the recipe I wanted and found them to be Delicious!!
 Ingredients:
1 lb ground turkey
4 Whole Peppers
1 1/2 to 2 Cups  blended Cauliflower
1 can Mexican Stewed tomatoes (blended) or other type of canned tomatoes
1/4 cup chopped onion
1 tsp chopped garlic
1 TBLSP Montreal Steak Seasoning
1/2 tsp ground cumin
Red pepper flakes - to taste
Salt & Pepper
Olive Oil

Preheat Oven to 350.  Brown your chopped onions in about a tblsp of oil.  When translucent add your garlic and let saute for about a minute.  Add in your ground turkey  and spices and cook until browned.  Take your cauliflower and break off peices and put it into a blender so you can pulse it to get a rice like texture (because that is what you are replacing the cauliflower for) - Brilliant!!  Brown it also in a seperate pan with about 1 tblsp of oil and salt & pepper to taste.
Once both are browned add your can of mexican stewed tomatoes to your blender and give them a few pulses and pour into your ground turkey along with your cauliflower.  Let simmer for 2-3 minutes.
Cut your peppers about 1 inch from the top and take the insides out and rinse.  Brush your peppers with olive oil and set into a 8x8 glass pan and spoon your filling into the peppers and any remains spoon into the bottom.   Add your tops back onto the peppers and cook for 45 min.  YUM!!!
