Sweet Potato, Sausage, Spinach Hash

Aloha Everyone!!  I just got back from a 9 day vacation to Maui and the only thing that brought me back were my 3 stink'n cute boys!  I sure missed them!  But I didn't miss this weather that's for sure!  The day before I left I made this yummy skillet breakfast that was awesome!!!  I didn't have chicken sausage so I used ground turkey sausage and it was awesome!  Definitley use the cinnamon called for!  And enjoy!!!  If I can't get a good picture I always still a copy of theirs so at least it looks appetizing, then my pics are down below!!

Cinnamon Chilli Pork Tenderloin with Apple Salsa

So this Yummy recipe came from the Blog I told you about MULIPLY DELICIOUS!   And this was very Delishious!  It was very simple too!  All you do is marinate the tenderloin for how ever long you want and bake it in the oven for 20 min, then pour your apple salsa over it.  It was a nice change from just chicken and vegetables!  Then the next day I turned it into a salad for lunch!  I think I loved it even more that way.  You can have it with just the apple salsa on top or that plus a drizzle of  Cilantro Lime Dressing on top!  (That was even better!!) If you make the dressing which is very worth putting on any salad, just use honey or I used Xylitol which is a natural sweetner instead of sugar.   And yes those are SWEET POTATO FRIES,  you can find recipe HERE .  I thought they were awesome!!!!

Cinnamon Chili Rubbed Pork Tenderloin with Apple Salsa
3 tablespoons olive oil
3 garlic cloves, minced
1 tablespoon chili powder
½ tablespoon ground cinnamon
1 pork tenderloin
Salt and pepper to taste
2 cups diced Fuji apple, about 2 medium apples
1/2 cup diced red bell pepper
1/3 cup fresh lime juice
1/4 cup diced red onion
1/4 cup minced fresh cilantro
1 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Instructions:
Combine all ingredients, stirring well. 
Instructions:
Preheat oven to 400 degrees.  Combine olive oil, garlic, chili powder, and cinnamon in a large shallow bowl.  Add pork, and turn to coat evenly with chili cinnamon mixture.  Sprinkle both sides of the pork with salt and pepper.  Let the pork marinate in the rub for about 15 to 30 minutes.
Heat a grill pan over medium-high heat, and spray with coconut spray (or oil pan slightly).  Add pork and cook until browned and grill marks appear, 2 to 3 minutes per side.
Transfer pan to oven.  Bake pork to desired doneness, 17 to 18 minutes.  Let stand for at least 5 minutes, then cut into 1/2-inch thick slices.

Mulitply Delicious

So I obviously have been a slacker at posting new recipes, like I said before, I've been making dinners and having it for leftovers!!!  But I have found this wonderful Blog that actually listed a whole week worth of her Paleo Dinners that look absolutely divine!  She is actually a crossfitter newly gone Paleo in the past 6 months or so, and she is very inspiring!  Check it out!!!

Grandmas Lemonade

So who out there is craving something to drink besides water?  ME!!!  I don't have a problem with soda so I can't tell you I feel for your craving of carbonation.  But if you want something sweet, here you go!  My Mom has made her own lemonade for years and My son Cord always asks for "Grandmas Lemonade".  And it's darn easy!!!!  Just fill a tall glass with cold water and crushed ice.  Squeeze about 1/2 of a lemon and 1/4 of a lime (you can use just lemon if you don't have limes, but lime just gives it the zest I love!) into your glass.  Then squirt about 15-18 drops of STEVIA extract into it.  The stevia is a natural sweetener that makes your drink sweet and not tart and sour.  It's wonderful! You can get it at Smith's Market Place, or any natural foods store, or Shangrila.  Heck I even think they have it at Walmart (I know they have powder).

A little Re-Design on old recipes...

I hope everyone is doing ok during their paleo change over!  It's a lot harder to post recipes as often as I would like because I seem to be cooking a lot of meat and doing leftovers with different veggies a lot!  So I thought I would do a post with a few recipes that AREN'T on my paleo tab, just to show you how easy it is to fix!  My first one is the GRILLED CHICKEN & BERRY SALAD with homemade  BERRY POPPY SEED VINAGERETTE  .  This can easily be a full course meal if you add enough chicken!
****Just don't add cheese to salad, and use honey instead of sugar in the dressing!!



My second idea would be my COATS CHILLI.  The only thing you need to change was to make it a beanless chilli.  Don't add any beans, instead add another 1lb of sausage or turkey burger or beef.  And we all know Ketchup is a no-no in the paleo diet, but their is one at Walmart that is Organic that doesn't have any High Fructose corn syrup and the low sugar amount is from organic natural sugars!  Or just eliminate the ketchup and brown sugar and it just wont be as sweet, but just as good!!!  And of Course no Cheese on top!!

Curry Baked Cauliflower

So who out there is in desperate need of different ways to cook up those vegetables you are supposed to be eating..... 3 times a day.....?  ME!!!  This Cauliflower is absolutely delicious!!  And don't you think it looks a bit like popcorn?  Your kids will love it!!!  I've made these a few times and I can honestly say they are my favorite way to prepare cauliflower!!!  Enjoy!


 1 Medium head Cauliflower
1 1/2 TBLSP olive oil
1/4-1/2 tsp salt
1/2 tsp Curry Powder

Preheat oven to 475*
Wash and cut your Cauliflower into bit size florets.  Place in a large bowl and toss with your oil, salt & curry until completely covered.  Turn onto a cookie sheet and spread evenly, then place in the oven.  Bake for about 15 min stirring half way through until you get browned spots and is crisp tender.  Serve Immediately!  Delish!

Pinwheel Chicken & Pesto

So I found this recipe off of a Paleo Blog and it looked really yummy to me, so I gave it a try.  The original recipe called for a big slice of swiss cheese in the middle, but of course I left that part.  But my husband Chris said, that's the one thing he thought it was missing!  Oh well, I'm the cook, and things are going to be a bit different around here!  This was really yummy and simple.  The original recipe also called for it to be wrapped up in tin foil and grilled, but it's way too cold to do that right now, so I just popped it in my bake ware and it turned out fabulous!!


2 big Chicken breasts- sliced in half
4-6 tblsp pesto sauce -I just used one from a jar
mixed vegetables
4 peices of bacon
Sea salt & Pepper to taste
Oregano
Basil
Coconut Oil (you can use olive oil)
Preheat oven to 375*.  Take your chicken breasts and either pound them down to be real thin, or I cut a big breast length wise so one becomes two.  Season your breast with salt & Pepper.  Spread 1 tblsp or so of your pesto sauce onto your chicken breast, lay a peice of bacon in the middle and roll the breast into a pin wheel.  Hold it down with a few toothpicks.  Then Salt & Pepper the top of your breast, then drizzle with Coconut oil and season with Oregano & Basil.  Put these into a bakeware and throw some of your favorite veggies in there seasoned how ever you would like.  I Salt & peppered them then drizzled a bit of the leftover coconut oil & Pesto sauce on top.    Pop it in the oven covered and bake for 45 min.  Turned out Great!!!  Enjoy!

What's for Breakfast???? - LEFTOVERS!

A lot of people have been asking me what in the world are they going to eat for breakfast now that they aren't supposed to have Whey Protein Shakes, or Whey Protein Bars, or any kind of bread.  Well the answer my friend is going to be a lot of eggs, leftover dinners, and fruit.  I absolutely LOVED this mornings breakfast.  I just got out my Spicy Stuffed Peppers I made last night, cut one in half and chopped up the peppers, & then I threw it in the microwave.  Them I scrambled an egg, combined them together, topped it with Salsa, Avocado & Cilantro!  A Masterpeice!  I  actually had it for lunch too it was soo good (plus I needed to make it again so I could take a picture of it to put on my blog)!!

Spicy Stuffed Peppers

These Paleo friendly Stuffed Peppers are packed with tons of flavor!!!  I made these before last year and liked them, but I wanted to spice them up and LOVE them.  So I looked at like 4 different recipes and combined them into just the recipe I wanted and found them to be Delicious!!
 Ingredients:
1 lb ground turkey
4 Whole Peppers
1 1/2 to 2 Cups  blended Cauliflower
1 can Mexican Stewed tomatoes (blended) or other type of canned tomatoes
1/4 cup chopped onion
1 tsp chopped garlic
1 TBLSP Montreal Steak Seasoning
1/2 tsp ground cumin
Red pepper flakes - to taste
Salt & Pepper
Olive Oil

Preheat Oven to 350.  Brown your chopped onions in about a tblsp of oil.  When translucent add your garlic and let saute for about a minute.  Add in your ground turkey  and spices and cook until browned.  Take your cauliflower and break off peices and put it into a blender so you can pulse it to get a rice like texture (because that is what you are replacing the cauliflower for) - Brilliant!!  Brown it also in a seperate pan with about 1 tblsp of oil and salt & pepper to taste.
Once both are browned add your can of mexican stewed tomatoes to your blender and give them a few pulses and pour into your ground turkey along with your cauliflower.  Let simmer for 2-3 minutes.
Cut your peppers about 1 inch from the top and take the insides out and rinse.  Brush your peppers with olive oil and set into a 8x8 glass pan and spoon your filling into the peppers and any remains spoon into the bottom.   Add your tops back onto the peppers and cook for 45 min.  YUM!!!

Recipe Blog - Gone Paleo (for 30 days)

Happy New Year!!!  In light of this new year, and my 30 day Paleo Diet Challege, I will only be posting Paleo recipes to help those out who are participating in this contest - lifestyle change!!!  Go UAC'ers!!  Those of you who brought recipes to the PALEO POTLUCK, please forward them to me or post them and I will get them on my blog asap.  If you could take a fancy picture of it as well, I will post that too.  If you are funny like me, I hate to try new recipes unless I see a picture of it!!!!
SOooooo Anyways, For my first paleo recipe of this new year I'm going to post something quite simple!  I learned this one from my friend Suz, who has been eating Paleo for quite awhile.   I don't even know what to call it.  How about.....Canned tuna/chicken dip & veggies!


Canned Chicken or tuna
Mayo
Sunflower Seeds
Salt & Pepper
Broccoli (Or any veggie)
Just mix your canned chicken (that is what I prefer) with either the Mayo & Olive Oil, or home-made Paleo Mayo, to what ever consistency you like, Salt & Pepper and sunflower seeds.  ( I was out so I used walnuts and it was still good, but sunflower seeds are better).  And Dip your veggies in and eat!  So good!  Just an easy snack to get you through your day!
